Allspice Cake
This lovely cake is delicious and moist. The caramel topping really makes it special. Good on its own and especially nice served with a scoop of ice cream.
Allspice Cake
Ingredients
- 1 1/8 c. flour
- 1 c. brown sugar
- 1/2 Tbsp. ground allspice
- 1/2 tsp. ground cinnamon
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 2 eggs
- 1/2 c. + 2 Tbsp. milk
- 1/2 c. oil
- 1 tsp. vanilla extract
- 1 recipe caramel (you may not need the whole thing)
Directions
- Preheat oven to 180°C (350°F) and grease and flour an 8" round cake tin.
- Combine flour, sugar, allspice, cinnamon, baking powder, baking soda, and salt.
- In a separate bowl, beat eggs with milk, oil, and vanilla.
- Mix wet ingredients into dry and stir until just combined.
- Pour batter into prepared tin and bake at 180°C (350°F) until toothpick inserted in centre comes out clean. (I forget exactly how long this took for me. Start with 30 minutes on the clock and go from there.)
- Remove from oven and allow to cool in tin for 10 minutes.
- Turn out of tin and place cake on wire rack to finish cooling.
- Meanwhile, prepare the caramel.
- Pour caramel over cake and set aside while caramel cools and sets.
- Serve on its own or with ice cream.
