Cheeseburgers

While there's much to be said for the humble hamburger, I must say that I do prefer this version that adds a topping of melted (preferably firm, flavourful, and aged) cheese to the contents between the slices of bread.

Cheeseburgers
1 lb. ground beef
1 Tbsp. garlic paste (optional)
salt and pepper
4 slices of cheese (I prefer aged Cheddar)
9 slices of bread
butter (optional)

Crumble 1 slice of bread into crumbs. Combine beef, breadcrumbs, salt and pepper, and garlic (if using). Form beef into patties and cook over a medium flame until nice, dark grill marks form on both sides. If using, spread some butter on the remaining bread. Toast until golden brown. When burgers are almost done, top each patty with a slice of cheese and allow it to melt. Serve each cheesy patty between two slices of toasted bread with whatever sauces and toppings you prefer.
