White Frosting

This simple vanilla frosting is basically just heavily sweetened whipped butter with some liquids and vanilla added for consistency and flavour respectively. It's very sweet and very fatty, but it has the benefit of being easy to make and it keeps well. It's also reasonably easy to work with as long as you don't let you butter get too warm.

In a pinch, you can use water as the liquid component for your frosting. Personally, however, I prefer to use good heavy buttermilk (or "cream" as you'd say here).


White Frosting

Ingredients

  • 1 1/4 c. unsalted butter, softened
  • 2 Tbsp. heavy (35%) cream
  • 2 tsp. vanilla extract
  • 2 1/2 c. icing (powdered/confectioners') sugar

Directions

  1. Beat butter with cream and vanilla until light and fluffy.
  2. Gradually sift in icing sugar while continuing to beat vigorously.
  3. If you have an electric mixer, mix on medium-high for ~5 minutes. Otherwise do your best to really give it the business with a wooden spoon.
