Staple Soup Vegetables

This isn't a recipe so much as a starting point. This medley of vegetables, as the name implies, is core to many Tyrian soups and stews.



Staple Soup Vegetables
1 Tbsp. butter
1 large onion, chopped
1 large carrot, chopped
6 ribs celery, chopped
3 cloves of garlic, smashed
1 large potato or 10-12 new potatoes, cubed and boiled

Melt the butter over medium heat. Add the onion, carrot, celery, and garlic and cover. Once the vegetables begin to soften, add the potatoes. Allow to cook for several minutes without stirring so that the potatoes (and other vegetables) brown a bit. Give it a stir and cook for several more minutes until vegetables reach desired level of browning. Vegetables are now ready to be incorporated into a soup or stew of your choice.
