Lotus Fries

Just a very quick and simple recipe for you today. This is another Canthan specialty that's become popular Tyrian fare, especially in Kryta and the Maguuma Jungle.


Lotus Fries

Ingredients

  • lotus root (as much as you feel like frying)
  • water (optional)
  • rice vinegar (optional)
  • oil, for frying
  • salt & pepper, to taste

Directions

  1. Wash the lotus root well and slice it very thin. Aim for no more than 1-2mm.
  2. If you'd like to prevent discolouration, you can soak the slices in some vinegar-water for a few minutes. Measure out enough water to cover the slices and then add 1 tsp. of rice vinegar per cup of water. Soak for 5-10 minutes. Then drain and dry thoroughly.
  3. Heat oil in a wok or deep-fryer. I used a wok over medium-high heat for mine.
  4. Add a few slices of lotus root. Try not to overcrowd them. Six to eight slices is probably about right in most woks. You might be able to do more or less at a time depending on the size of your wok/fryer.
  5. Cook until crispy and golden-brown. You may need to flip them to help them cook evenly.
  6. Remove from hot oil and set on paper towels or a wire rack to drain excess oil.
  7. Toss with salt and pepper and serve!
