Simple Chili Base

Tyrians have a slightly different take on chili than Terrans do. For Terrans, as far as I can tell, chili must involve meat and/or beans cooked in a spicy tomato sauce. Some are of the opinion that beans are mandatory and meat is optional, others (mostly Texans) claim the opposite. But one of the two are always involved. For Tyrians it's a bit different. They only requirement is that the chili components be cooked in a spicy tomato sauce. This means that, in Tyria, in addition to meal chilis and bean chilis, you also get zucchini chilis and mixed vegetable chilis and all sorts of other things that probably wouldn't fit the Terran definition of "chili". This Simple Chili Base is the starting point for several of these chilis. (Though, oddly, it never gets used with bean-based chilis.)


Simple Chili Base

Ingredients

  • 1 pile (recipe) of Simple Chili Seasoning
  • 1 onion, chopped
  • 1 jar (recipe) of Tomato Sauce
  • 1 fresh jalapeño chili, chopped or 1 dried guajillo, pasilla, or chipotle chili, crushed

Directions

  1. If desired cook the chili seasoning and the onion in a little oil for a minute or two before you begin. Sometimes I opt to hold back the plain onion (the one not included in the chili seasoning or tomato sauce) from the base and cook it alongside whatever is making up the bulk of my chili. This works especially well for meat chilis.
  2. Add the remaining ingredients.
  3. Since the chili base always gets cooked further in the finished dish, no additional cooking is required at this point. Sometimes I choose to simmer it for a few minutes anyway, but it is not strictly necessary.
