Saffron-Scented Poultry Soup
As this soup only uses a few ingredients, it's important to make sure they are top quality. I recommend using a good, homemade chicken stock. Ideally made from the leftovers of a very flavourful roast chicken. I used the bones and scraps from a nice Spicy Herbed Chicken. This gave my stock a lovely robust flavour that complemented the saffron well. Making it with minimally seasoned chicken is also valid; you will get a much more pure saffron flavour this way. If you were looking for a simple but upscale offering, that might be the way to go. Personally, I prefer my extra herby version!
Saffron-Scented Poultry Soup
Ingredients
- 1 1/2 c. Herbed Poultry Stock
- 150g cooked chicken
- 1/8 tsp. saffron threads
Directions
- Combine all ingredients in a small pot and bring to a boil over medium heat.
- Reduce heat and gently simmer for 10-20 minutes.
