Marinated Mushrooms
This is a very simple dish that works great as an appetizer or a side. It's best made a day ahead and can be served hot or cold.
The simplest and most traditional version of these mushrooms uses a plain oil and vinegar dressing. I have followed that procedure here to keep things as easy as possible. Personally though, I quite enjoy using Ascalonian dressing (or some other herby vinegarette) as the marinade. I like the extra seasonings!

Marinated Mushrooms
Ingredients
- 250g cremini or button mushrooms
- 1/4 c. Simple Dressing
Directions
- Clean the mushrooms off and trim the stems if necessary. If your mushrooms are larger than ~20mm (3/4") in diameter, quarter them before proceeding.
- Bring a pot of water to a boil and boil the mushrooms for 3-4 minutes.
- Drain the mushrooms. (Save the water for making soup stock!)
- Pour the dressing over the mushrooms and chill for at least 4 hours before serving.
- Serve hot or cold as an appetizer or a side dish.
