Green Bean Stew

This is another one of those basic stew recipes. Perhaps not the most flavourful, but it's easy to put together and it'll keep you on your feet. Serve it along with a slice or two of garlic bread or heap it onto buttered toast and melt a little cheese over for a comforting open-faced sandwich.


Green Bean Stew

Ingredients

  • 2 Tbsp. olive oil
  • 1 onion, chopped
  • 1 clove garlic, minced (optional)
  • 400g green beans, cut into bite-sized pieces
  • 500g stewing beef
  • 500mL Red Meat Stock
  • salt and pepper, to taste

Directions

  1. Heat oil over medium heat.
  2. Add onion and a sprinkle of salt and cook until softened.
  3. Add garlic and cook for another minute or two.
  4. Increase heat to medium-high and add beef.
  5. Seas on beef with a little salt and pepper and sear on all sides then transfer the whole mixture to soup pot or slow cooker.
  6. Add stock, bring to a boil, then cover and reduce to a simmer for an hour or two. If using a slow cooker, cook on low for 8 hours.
  7. Toss the beans into the pan that was used to cook the onions and cook over medium heat for 3-4 minutes.
  8. Add beans to stew and simmer for an additional 5-10 minutes.
  9. Season to taste with salt and pepper.
