Although it's nice to be able to add spices individually and tweak the proportions for each use, there is something to be said for ready-made mixes. Pumpkin pie spice is a cinnamon-heavy mixture with ginger, nutmeg, and cloves rounding it out.

Pumpkin Pie Spice

Ingredients

• 1 part ground cloves
• 4 parts ground ginger
• 4 parts ground nutmeg
• 12 parts ground cinnamon

Directions

1. Combine all ingredients and mix well.
2. Store in an airtight jar until ready to use.
