Roasted Meaty Sandwich
For a simple sandwich this is incredibly delicious. (Especially if you have a few extras to toss in!) Make sure you use good quality roast beef (or lamb) for this. I've found that some of the mass-produced deli meats here in North America are very, very salty. If you're not using your own home-cooked roast beef, at least make sure that you've found a nice grocery store variety.
Condiments such as mayonnaise and horseradish are not traditional, but I think they make a nice addition, so I recommend them if they're available to you. I also had a bit of excess spinach that needed to be used up, so I added a few leaves to my sandwich, but this is not a critical component.

Roasted Meaty Sandwich
Ingredients
- 2 Tbsp. olive oil
- 1 tomato (preferably an heirloom variety), sliced
- 1 crusty bun or 2 slices crusty bread
- 2 tsp. prepared horseradish (optional)
- 2 tsp. mayonnaise (optional)
- 2-3 spinach leaves
- 4-5 thin slices roast beef (or lamb)
- 1/4 c. basil leaves or (even better) basil "microgreens"
Directions
- Heat olive oil over medium heat.
- Add the tomatoes and cook until they get a little colour on their undersides.
- Carefully remove from pan.
- If using a bun, cut it open. Place the bread slices/bun halves in the pan and cook in the residual oil from frying the tomatoes.
- Once bun/bread is nicely toasted, remove from pan.
- Spread horseradish on one side and mayo on the other (if using).
- Top one slice of bread/bottom half of bun with spinach.
- Layer roast beef on top of spinach and place tomato slices on top of beef. (You may not need all of the tomato depending on its size.)
- Add basil on top of the tomato and cap with the other slice of bread/bun top.
