Fancy Veggie Pizza

It's been a while since I've made a Tyrian pizza. As per usual, I swapped out the traditional Tyrian pastry crust for a Terran-style bread crust.

I believe I mentioned before how a game of broken telephone between Nicholas the Traveller and the Tyrian chefs who first prepared pizza in Elona resulted in some very odd changes to the recipe. As near as I can tell, the regional slang and habit of referring to pizzas as "pies" in certain parts of the North American continent may have contributed to the confusion and the belief that this cheesy flatbread was meant to be assembled on a shortcrust pastry base.

However it happened, Tyrians have stuck with the practice and seem unlikely to budge from it now. And, to be sure, the pastry base isn't bad. But, having had ample opportunity to compare the different forms of pizza, I do find that I generally prefer the Terran approach.

I have stayed true to the recipe otherwise. Just be aware that the yested bread crust is not representative of an authentic Tyrian pizza. And, by all means, feel free to swap it out if you would prefer the genuine article. Just reduce the baking time by a few minutes to account for the thinner, richer crust.



Fancy Veggie Pizza

Ingredients

  • 1 mushroom pizza
  • 1 shallot, halved and thinly sliced
  • 1/2 bell pepper, sliced
  • 1 handfull of baby spinach

Directions

  1. Place pizza stone in oven and preheat to 250°C (475°F).
  2. Prepare your mushroom pizza up to the point of baking: Dust a peel generously with cornmeal, stretch the dough into a large round, spoon the tomato sauce over leaving a 2cm border, sprinkle with grated mozzarella, and top with sliced mushrooms (preferably at least two varieties).
  3. Scatter sliced shallots, bell pepper, and spinach leaves over top.
  4. If desired add a small additional sprinkle of cheese.
  5. Transfer the pizza to the preheated pizza stone. A quick, smooth jerk of the arm (like you're doing the tablecloth trick) is usually best for achieving this.
  6. Bake at 250°C (475°F) for 7 minutes (or up to 10 for a thick crust).
  7. If cheese is insufficiently browned, turn on the broiler/grill for 2 minutes before removing from the oven.
  8. Transfer to a cutting board, cut into wedges, and serve.
