Sesame-Ginger Sauce

Originally from Cantha, this salty-savoury sauce has become popular Rata Sum and the surrounding area. If you can find a commercially made toasted sesame paste it is a great time saver. Otherwise, you can make your own by grinding toasted sesame seeds with a little sesame oil.

Sesame-Ginger Sauce

Ingredients

  • 1 Tbsp. sesame seeds, toasted
  • 1-2 cloves garlic, minced
  • 1/2 Tbsp. freshly grated ginger
  • 2 Tbsp. light soy sauce
  • 1 Tbsp. dark soy sauce
  • 1 tsp. toasted sesame paste
  • 1/8 tsp. white peppercorns, ground (optional)

Directions

  1. Toast the sesame seeds until darkened, but not burnt and immediately remove from pan so they do not overcook.
  2. Combine toasted sesame seeds with remaining ingredients and mix well.
