Mint Sauce

A refreshing concoction of dairy and mint with just a hint of heat from the chilies. This creamy sauce is a favourite on Tyrian venison. I didn't have any venison easily to hand (and Terran deer never tastes quite the same anyway), so I settled for serving it with lamb. This is the ideal complement to a nice roast leg of lamb. That said, there's no reason why it can't be served with other red meats (or vegetables if you prefer). Experiment! Try out some different combinations and see what you like.

Mint Sauce

Ingredients

  • 1/2 c. sour cream (or crème fraîche)
  • 1/4 c. fresh mint, minced
  • 1 fresh green serano or jalapeño chile
  • 1 tsp. sugar
  • salt & pepper, to taste

Directions

  1. Mix everything together thoroughly.
  2. Cover and chill overnight.
  3. Serve with lamb, venison, or other meat of your choice.
