Ascalonian Salad
Roasted beet salads are a classic. No less so in Tyria than Terra. This particular version takes a fairly purist approach adding a drizzle of herby dressing to a simple bowl of roasted beets and lettuce.
I'm used to beet salads involving a lot more flavours and elements than this: goat cheese, pumpkin seeds, other vegetables, more elaborate dressings... all sorts of things! But I was pleasantly surprised with this very straight-forward, no non-sense Tyrian approach. Many of the Terran versions are quite good, but it turns out that you don't actually need any of those other things; just the beets and lettuce are enough.

Ascalonian Salad
Ingredients
- 2-3 medium-sized beets
- 3-4 Tbsp. Ascalonian dressing, divided
- 1 head romaine lettuce, washed and torn into bite-sized pieces
Directions
- Preheat oven to 200°C (400°F).
- Trim the beets and drizzle with a little of the dressing.
- Wrap in foil and roast until tender (45-60 minutes depending on size of beets).
- Remove from oven and allow to cool.
- Once cool enough to handle, unwrap, peel, and cut into wedges.
- Place the lettuce in a salad bowl, top with beets, and drizzle with the remaining dressing.
