Bean Salad

I'll be the first to admit that this isn't the fanciest bean salad. Not much in the way of seasonings... or ingredients at all, really! But if you just need something quick and easy to fill your belly and give you a bit of protein and energy for the day, then this will do the job. And, if you happen to have some extras on hand, you can certainly jazz it up with a few herbs or some garlic or different veggies as you see fit.


Bean Salad

Ingredients

  • 1 small red onion, chopped
  • ~1/4 c. simple dressing
  • 1 c. cooked kidney beans
  • 1 c. cooked black beans

Directions

  1. Combine the onion and dressing and set aside.
  2. If cooking the beans from dried, you may wish to add a little seasoning to the cooking water: a clove of garlic, a bay leaf, half an onion, and/or a bouillon cube are all good options. That said, these are all totally optional and cooking in plain water will be just fine as well.
  3. Drain the beans and add them to the bowl with the onion. Toss to combine.
  4. Adjust seasoning to taste and serve chilled or at room temperature.
