Chickpea Soup
Tomato soup is nice, but it's not very substantial on its own. Adding some chickpeas, bell peppers, and herbs makes it both more filling and more flavourful.
1 Fresh bell pepper works just fine here, but roasted is also very nice if you have the time to prepare it. Back
Chickpea Soup
Ingredients
- 1 bowl of tomato soup
- 1/4-1/3 c. Ascalonian herbs
- 2 c. cooked chickpeas
- 1 red bell pepper1, chopped
Directions
- Bring the soup to a low simmer.
- Add the herbs, chickpeas, and bell peppers and cook until heated through and flavours have blended (5-10 minutes).
