Ascalonian Dressing
Hello, all! It's been a while. I wanted to ease my way back into things and start with something simple, so I decided on a salad. Unlike some of the previous salads I've shared though, this one uses a slightly more involved dressing. Nothing elaborate, but the addition of Ascalonian herbs adds a lot and gives it markedly more flavour than the simple dressing you may remember from previous recipes.
You can make the dressing very quickly and easily by simply mixing all of the ingredients together. However, I was all out of fresh herbs today so I decided to boost the flavour a bit by gently infusing the oil before adding the vinegar.

Ascalonian Dressing
Ingredients
- 2 Tbsp. olive oil
- 1 Tbsp. Ascalonian herbs
- 2 Tbsp. red wine vinegar
- 1/4 tsp. coarse sea salt, ground
- 1/4 tsp. black peppercorns, ground
Directions
- If you're using dried herbs, heat the oil gently over low heat, add the herbs, and infuse for 5 minutes.
- Stir in the salt, pepper, and vinegar and mix well.
