Refugee's Beet Soup
Sometimes recipes are born of necessity. When you are a refugee fleeing from death and violence at home and traveling with limited resources, you have to be creative with using the resources around you.
Such was the case with this humble beet soup. Many Norn refugees fleeing the Molten Alliance ended up settling in the Diessa Plateau where they found plentiful supplies of root vegetables and herbs. They combined the local beets, carrots, and dill with onions and potatoes brought from home, combining it all into a warm, sustaining broth.
This is not, to be sure, a substantial soup. But it tastes nice and works well enough as a light meal when combined with a slice of buttered toast or a simple sandwich.

Refugee's Beet Soup
Ingredients
- 1 bowl of staple soup vegetables
- 500-600g beets, peeled and diced
- 1L vegetable stock
- 1/4-1/2 c. chopped fresh dill
- salt and pepper, to taste
Directions
- Add the beets to the soup vegetables and cook as directed.
- Add the stock and bring to a boil.
- Reduce heat to low, cover, and simmer gently for at least 30 minutes.
- Stir in dill and cook for another 3-5 minutes.
- Season to taste with salt and pepper.
- Serve with buttered toast or sandwiches.
