Steak and Asparagus

Simple, but hearty and delicious! A perfect combination.

Season a juicy steak with a little salt and pepper. Cook it in a generous quantity of butter. And then cook the asparagus in any residual drippings while the steak rests. Beautifully efficient. Incredibly delicious. Almost nothing to it.

Round out the meal with some mashed potatoes or another vegetable of your choice and a nice glass of wine. What could be better?

Steak and Asparagus

Ingredients

  • 1 T-bone or porterhouse steak
  • salt and pepper
  • 2 Tbsp. butter
  • 250g asparagus
  • splash of water (optional)

Directions

  1. Season the steak with 1 tsp. of coars sea salt per kilo and ~1/2 tsp. of ground black pepper per kilo.
  2. Melt the butter over medium-high heat.
  3. Add the steak to the pan and sear on both sides.
  4. Reduce heat to medium-low and cook to desired doneness.
  5. Remove steak from pan and set aside to rest.
  6. Add asparagus and toss/stir to coat in residual butter and pan juices.
  7. If pan seems dry, add a splash of water.
  8. Cook until asparagus is just tender.
  9. Serve asparagus and steak together. Use a little flour and water to make a pan sauce to go over them if desired.
