Chocolate Mint Cookies

Simultaneously rich and chocolaty and cool and minty, these are some of my all-time favourite cookies! These cookies use a simple variation on the basic Tyrian cookie dough. There are a few extra steps and a couple added ingredients, but they still have the same core components.


Chocolate Mint Cookies
250g butter
60g semi-sweet chocolate
140g sugar1
15g fresh mint leaves, chopped
1 egg
400g flour
30 jumbo chocolate chips2

Melt the butter together with the chocolate. Whisk until mixture is well-blended and homogeneous. In a separate bowl, combine mint with sugar. Rub the mint leaves and stir through to perfume the sugar. Combine the chocolate mixture and the mint mixture. Add the egg and mix well. Stir in the flour to complete the dough.
Roll dough into 1" balls, place on greased baking tray, and press flat. Bake at 350F for 10 minutes. Place a jumbo chocolate chip atop each cookie and allow to sit in warm oven for an additional minute or two.



1 I used plain granulated sugar here but, if you have it, a 50/50 mix of brown and granulated sugar would be lovely.
2 I found something called "Euro style chocolate chips" at my local grocery store. Hershey kisses would also work well here if you don't mind unwrapping them all.
